Why we chose this coffee

We chose Frinsa Peach Tart to highlight the innovative direction of modern Indonesian coffee. This lot uses a lactic natural fermentation, building on an anaerobic natural process to push fruit expression to the extreme. By fermenting cherries in an oxygen-free environment, the coffee develops an intense, candy-like sweetness and vibrant tropical character.

The introduction of lactobacteria adds another layer of precision. It helps create a cup that is not only bold and expressive, but also cleaner, more balanced, and remarkably consistent. Java Frinsa Estate is a specialty coffee producer based in the highlands of West Java, led by husband-and-wife duo Wildan Mustofa and Atieq Mustikaningtyas. Founded with a vision to elevate Indonesian coffee through precision and innovation, Frinsa has become one of the country’s most respected producers, combining meticulous processing with a deep commitment to quality at every stage.

Beyond their own estate, Frinsa operates as a collective, sourcing ripe cherries from neighbouring smallholder farms and processing them centrally at their facility. This model allows Frinsa to apply strict quality standards, careful cherry selection, and consistent post-harvest practices across all lots. By maintaining full control of washing, fermentation, drying, and grading, they ensure clarity, traceability, and repeatable excellence, even when working at scale.
