Finca de Berman is one of Indonesia’s most recognised coffee producers, located in the highlands of Pangalengan, West Java. Known for producing clean, complex, and expressive coffees, the farm has gained recognition through the Indonesia Cup of Excellence.

This lot was processed using Hypoxia Carbonic Maceration, an advanced fermentation method that uses a controlled low-oxygen environment with added CO₂ to enhance flavour development. The result is an intense yet elegant cup with remarkable clarity.

In the cup, expect notes of red grapes, pomegranate, and a soft wine-like acidity, complemented by a refined sweetness and lingering finish. Named after the classic Red Moscato wine, this coffee captures the same qualities of vibrancy, fruitiness, and elegance.

Roasting

We roast our filter coffees light and our espresso coffees medium-light to showcase the unique character of each coffee.

Our philosophy is simple: light, but well developed - preserving origin flavours while bringing out sweetness, balance, and the coffee's full flavour potential.

Grinding

We grind all of our coffee on the Lagom 01, widely regarded as one of the highest-clarity coffee grinders available today.

Why we chose this coffee

We wanted to bring in a coffee with a more intense and expressive character, while still maintaining the clarity and softness that we value. This innovative fermentation process impressed us with its ability to create a deep fruit-forward profile without introducing the heavy funkiness often associated with highly processed coffees.

Beyond the processing, Finca de Berman’s high-altitude growing conditions make this lot truly unique. Grown among some of Indonesia’s highest coffee regions, the beans are exceptionally small and uniform, a rarity among Indonesian coffees.

If you have enjoyed our Gayo Shiraz, Red Moscato can be seen as its gentler younger sibling. Inspired by the same red wine character, this coffee carries the same fruit-driven elegance, but with a softer, brighter, and more approachable expression.
