Gayo Shiraz is an extremely funky and wild coffee. There's a few ways to get the best brew out of this coffee. We recommend the below recipe to tame the funkiness.
Recommended – Hario Switch (Reverse Immersion):
Coffee: 12g
Water: 190g
Grind: Slightly coarser
Ratio: 1:16
Temperature: 92°C
Brew Steps:
- Close valve, pour 95g water
- Add coffee grounds, stir lightly
- Immerse for 2 minutes
- Open valve and pour remaining 95g water
- Total Brew Time: 3:00
Alternative methods
Coffee: 15g
Water: 230g
Temperature: 90–92°C
Grind: Medium, slightly coarser
Ratio: 1:15.5
Recommended filter: Flat-bottom (Conical V60 also works)
Brew Steps:
- Bloom (0:00–0:45): 40g
- 2nd Pour (0:45): Up to 120g
- 3rd Pour (1:15): Up to 180g
- 4th Pour (1:45): Up to 230g
- Drain Time: 2:45–3:00
